Ingredients
- 14 ounces zucchini
- 1 tablespoon chopped fresh mint
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh chives
- 1 chopped green onion (spring onion)
- 1 chopped garlic clove
- 2 beaten eggs
- 1 tablespoon olive oil
- 1 cup AP flour
- Salt and pepper to taste
- Oil spray for the grid
Directions
- Wash and grate the zucchinis without peeling them. Lightly salt the zucchini and place them in a colander. Squeeze them with your hands to remove as much water as possible.
- Put all the ingredients and the zucchinis in a bowl. Season and mix well to obtain a homogenous dough.
- Use a tablespoon to form small patties of dough and carefully place them in the Easy Fry fitted with the Regular Grid. You can put around 6 fritters at a time, spacing them well apart. Start the AIR FRY programme at 350 F for 12 mins.
- Use a smooth spatula to flip the fritters over.
- Repeat the operation until all the dough is used up.
- Serve piping hot with a sauce of your choice.
Pro Tip
To create that brilliant green color in blanching, make sure to keep the cooking of the green such as asparagus to 1 minute max sometimes even less. As soon as it is done it needs to go right into the ice. Cool it completely before removing.
