Ingredients
- 3 3/4 cups T65 or semi-whole wheat flour
- 1.5 tsp baking powder
- 1.5 tsp mixed spice powder
- 0.75 tsp ginger powder
- 0.75 tsp ground cinnamon
- 3/4 cup (1.5 sticks) soft butter, softened
- 1/2 cup + 1 tbsp cane sugar
- 1/2 cup honey
- 1 large egg
Directions
- Mix the flour, baking powder and spices in a recipient. Set aside.
- In another recipient, mix the soft butter with the sugar and honey. Using a spatula, mix until the mixture resembles ointment. Add the egg and mix again to obtain a smooth texture. Add the flour and spices and mix with a spatula to form a smooth biscuit dough. Place the dough in cling film and refrigerate for at least 2 hours.
- Once the dough has rested, use a rolling pin to roll out the dough to a thickness of 5 mm, then use a biscuit cutter to cut out man-shaped biscuits.
- Put a lightly oiled sheet of aluminium foil on the plate of your Easy Fry and place the biscuits on top. Start the cooking process.
- At the end of the baking time, leave the biscuits to rest in the Easy Fry for 5 minutes to allow them to finish baking, then remove them.
- Lay out the biscuits for the next batch.

For an extra burst of flavor, chill the dough overnight instead of just 2 hours. This allows the spices to meld more deeply into the dough, resulting in a richer, more aromatic cookie. Plus, it makes the dough easier to roll out and cut into shapes, ensuring your gingerbread men come out perfectly every time.
