Pan Seared Whole Branzino with Ladolemono Sauce

Ingredients

 

  • 3 3/4 cups T65 or semi-whole wheat flour

  • 1.5 tsp baking powder

  • 1.5 tsp mixed spice powder

  • 0.75 tsp ginger powder

  • 0.75 tsp ground cinnamon

  • 3/4 cup (1.5 sticks) soft butter, softened

  • 1/2 cup + 1 tbsp cane sugar

  • 1/2 cup honey

  • 1 large egg

     

Directions

 

  1. Mix the flour, baking powder and spices in a recipient. Set aside.

  2. In another recipient, mix the soft butter with the sugar and honey. Using a spatula, mix until the mixture resembles ointment. Add the egg and mix again to obtain a smooth texture. Add the flour and spices and mix with a spatula to form a smooth biscuit dough. Place the dough in cling film and refrigerate for at least 2 hours.

  3. Once the dough has rested, use a rolling pin to roll out the dough to a thickness of 5 mm, then use a biscuit cutter to cut out man-shaped biscuits.

  4. Put a lightly oiled sheet of aluminium foil on the plate of your Easy Fry and place the biscuits on top. Start the cooking process.

  5. At the end of the baking time, leave the biscuits to rest in the Easy Fry for 5 minutes to allow them to finish baking, then remove them.

  6. Lay out the biscuits for the next batch.

Pro Tip

For an extra burst of flavor, chill the dough overnight instead of just 2 hours. This allows the spices to meld more deeply into the dough, resulting in a richer, more aromatic cookie. Plus, it makes the dough easier to roll out and cut into shapes, ensuring your gingerbread men come out perfectly every time.
